Paleo Sweet Potato Chicken Soup with Grass-fed Bone Broth

Ingredients:

  • 3 tbsp pastured butter

  • 3 cloves garlic, diced

  • 4 organic sweet potatoes, skinned & chopped into bite-sized pieces

  • 1 stalk organic celery

  • 1 organic onion

  • 3 large organic carrots

  • 3 cups chopped organic spinach, red or white

  • 1 ½ lbs raw grass-fed chicken thighs, chopped

  • 4 cups grass-fed bone broth

  • 2 tsp paprika

  • 2 tsp thyme

  • 2 tbsp fresh chopped parsley

  • Sea salt & pepper to taste

Directions:

  1. Saute onion, celery, carrots, and garlic in a pain with melted butter for 5 minutes on medium heat

  2. Add raw chicken pieces & spices, keep stirring until chicken is browned and onions are soft

  3. Pour into large pot

  4. Add chicken broth, sweet potatoes, & cabbage and simmer for 30 minutes on medium; stir occasionally

  5. Serves 3-5
