Ingredients:

  • 2 cups blanched almond meal

  • 1 can pumpkin puree

  • 1 tsp. baking powder

  • 2 tsp. pumpkin pie spice

  • 1/2 tsp. salt

  • 4 tbsp. maple syrup

  • 2 tsp. vanilla

  • 6 eggs

Directions:

  • Mix all ingredients in a blender (or by hand in a medium bowl) until well combined.

  • Oil (Coconut Oil) griddle and cook on each side until golden brown. (Batter may be thick)

  • Enjoy!
