Healthy 4 Ingredient Peanut Butter Buckeyes


  • 20 Medjool dates

  • 3 tbsp natural peanut butter

  • 2 tbsp purified water

  • 1 cup semisweet chocolate chips


  1. Remove pits from the 20 Medjool dates. Put the dates in a food processor and process until crumbled.

  2. Add the 3 tbsp of peanut butter and turn on the food processor; while running, add 2 tbsp water.

  3. Process mixture until completely smooth (stopp and scrape down the bowl as needed).

  4. Lightly oil your hands to prevent sticking and then roll the mixture into small balls, approx. 30 to 40 total.

  5. Cover a cookie sheet in wax paper, then place the balls on the cookie sheet.

  6. Freeze until ready to dip in chocolate.

  7. For the chocolate, fill a large skillet halfway with water and bring it to a simmer.

  8. Then place the 1 cup of chocolate chips in a glass or metal heat-safe bowl.

  9. Once the water is simmering, turn off the heat and place the heat-safe bowl of chocolate in the water, then stir until melted. An alternative option is to use a double boiler to melt the chocolate instead.

  10. Dip each peanut butter buckeye halfway into the chocolate using a toothpick, and then smooth over the toothpick hole.

  11. Place the buckeyes back on the cookie sheet and refrigerate.

  12. Serve and enjoy!
