Low Carb Bread Alternative Recipe

Ingredients:

  • 1 c. Cottage cheese

  • 1 c. Almond flour

  • 2 eggs

  • 2 cloves garlic, minced

  • 1 t. Baking powder

  • 1/2 t. Oregano

  • 1/2 t. Aglio Olio Trader Joe’s garlic season blend (or other spices of your choice)

  • 1/2 t. Salt

  • 1/2 c. Shredded low moisture mozzarella 

  • 1 T. Olive oil


Directions:

1. Preheat oven to 375.  Place parchment paper on pan and spray olive oil on parchment paper. (Don’t skip this step.  It is necessary.)


2.  Blend cottage cheese, eggs, minced garlic  and olive oil w beaters until smooth. 


3.  In a separate bowl, combine almond flour, baking soda, salt, oregano and Aglio Olio or other spices of your choice.  Mix together. 


4.  While mixing wet ingredients, gradually add dry ingredients and blend well. Add mozzarella and mix again. 


5.  Spread on oiled parchment paper into rectangle. 


6.  Bake at 375 until light brown. 17-20 mins depending on your oven.  Optional to melt unsalted butter on top.  Let cool and then peel off of the parchment paper. 


7.  Be creative!  I’ve added a small amount of pesto on top and it was fabulous. I also have added guacamole on top and also good. And one time I cut up pieces of ribeye steak and a round slice of pickle and brought to a party where they were devoured immediately. The possibilities are endless. Enjoy!
