Chocolate Velvet Bliss Pie Recipe

Ingredients:
8 organic pears
1/2 c. Water
1 1/2 T. Plain beef unflavored gelatin
1 Bag Enjoy Life Dark Chocolate chips
Vanilla bean powder (optional)
1/4 c. Whole milk Ricotta cheese
1/2 c. Small curd Cottage cheese
Instructions:
Wash pears, leave skin on, core, and cut into chunks, add to sauce pan.
Pour 1/2 cup water over pears, boil until soft, about 15 mins.
Remove 1/4 cup water from pears
Sprinkle unflavored gelatin over pears and mix in to dissolve
Add whole bag of Dark Chocolate Chips by Enjoy Life, stir in as they melt
Add all the above ingredients in the sauce pan to a high speed blender.
Blend 'til smooth.
Add in Vanilla Bean powder and Ricotta cheese, blend.
Add 1/2 c. Cottage cheese, blend well.
Let cool a bit on counter, stirring often to release the heat.
Pour into gluten free pic crust and any leftover into individual ramekins.
I realize the chocolate chips are dairy free and I added dairy, but these are my favorite chocolate chip brand, so I always use them. I like the benefit of added protein from the gelatin and ricotta and cottage cheese. I think the natural salt of the cottage cheese is a nice balance from the sweetness of the chips. I am amazed at how well it all blends without any gritty feeling from the pear skins. I hope you enjoy as much as my family and friends have enjoyed it. Let me know what you think!
