Pumpkin Bread


Ingredients

  • 1 1/2 c gluten-free flour or whole-wheat flour

  • 1/2 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1 tsp orange zest

  • 1 cup pumpkin puree

  • 1/3 cup butter or coconut oil, melted & cooled

  • 2 eggs

  • 1/4 cup orange juice

  • 1/2 cup raw honey or maple syrup

  • 1 tsp vailla extract

Directions

  1. Preheat oven to 350 degrees

  2. Spray a 8×4 inch loaf pan with cooking spray

  3. Mix flour, baking powder, baking soda, cinnamon, nutmeg, and orange zest in a bowl.

  4. In a separate bowl, whisk the pumpkin puree, eggs, orange juice, vanilla, butter/coconut oil, and raw honey/maple syrup.

  5. Pour the wet mixture into the dry bowl and mix together until combined.

  6. Pour batter into your loaf pan.

  7. Bake for 45-55 minutes, or until a toothpick/fork comes out clean.

  8. Let cool, then serve and enjoy!
