1 1/2 c gluten-free flour or whole-wheat flour
1/2 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp orange zest
1 cup pumpkin puree
1/3 cup butter or coconut oil, melted & cooled
1/4 cup orange juice
1/2 cup raw honey or maple syrup
1 tsp vailla extract
Preheat oven to 350 degrees
Spray a 8×4 inch loaf pan with cooking spray
Mix flour, baking powder, baking soda, cinnamon, nutmeg, and orange zest in a bowl.
In a separate bowl, whisk the pumpkin puree, eggs, orange juice, vanilla, butter/coconut oil, and raw honey/maple syrup.
Pour the wet mixture into the dry bowl and mix together until combined.
Pour batter into your loaf pan.
Bake for 45-55 minutes, or until a toothpick/fork comes out clean.
