Anti-Inflammatory Turmeric Vegetable Soup

Ingredients:

1 tbsp olive oil

1 onion, diced

2 carrots, chopped

2 celery stalks, chopped

3 cloves garlic, minced

1 tsp turmeric

1/2 tsp ginger

6 cups vegetable broth

2 cups chopped kale

Salt and pepper to taste


Instructions:

Heat olive oil in a large pot. Sauté onion, carrots, celery, and garlic until softened. Add turmeric and ginger. Pour in broth and simmer for 20 minutes. Add kale and cook for 5 more minutes. Season to taste and serve warm.
