Easy Tomato & Spinach Frittata Recipe


Ingredients

  • 6 eggs, lightly beaten

  • 2 cups fresh spinach

  • 1 cup cherry tomatoes

  • 1 clove garlic, minced

  • Sea salt and ground pepper, to taste

  • Handful of shredded cheese

  • Additional vegetables, if desired (onions, broccoli, mushrooms, zucchini, sweet potatoes, etc.)

Directions

  • Preheat cast iron skillet on medium heat, swirl oil to coat

  • Add garlic and onion if desired, cook for 3 minutes

  • Add remaining vegetables and cook additional 5 minutes, stir occasionally

  • Preheat oven to 350 degrees

  • In a medium bowl, whisk eggs, salt and pepper

  • Turn off heat under skillet and sprinkle vegetables with half of the cheese

  • Cover with eggs then sprinkle remaining cheese on top

  • Bake for 20 minutes

  • Broil until golden brown on top

  • Let cool then serve and enjoy!
