Lentil Taco Recipe

Serves 8


  • 1 1/2 c French or green lentils

  • 2 tbsp extra virgin olive oil

  • 1 tsp garlic powder

  • 1 tsp ground cumin

  • 3/4 tsp Himalayan sea salt to taste

  • Fresh ground pepper

  • 1/2 small head of lettuce

  • 1/4 c lime juice

  • Organic corn tortillas or taco shells

  • Cilantro, chopped

  • Salsa (store-bought or homemade)

  • Avocado, sliced


  • Put lentils in a pot with 6 cups of warm water and bring to a low boil.

  • Boil for 15-20 minutes then drain.

  • Add olive oil, garlic powder, cumin, sea salt, chopped cilantro, and lime juice to lentils.

  • Thinly slice lettuce.

  • Warm tacos per instructions.

  • Add lentil mixture to tortillas/tacos.

  • Enjoy!
